This pairs great with your MFM fresh caught salmon tacos. It also works in your oven, but hey, it’s summer, so get to grill’n!
Serves 4
juice and zest of 2 limes
2 tbsp. honey
3 tbsp olive oil
1 1/2 bunches cilantro, finely chopped (tender stems included)
1 small shallot, finely chopped
salt and pepper
1 tsp ground cumin
1 tsp chili powder
1 1/2 pounds sweet potatoes, sliced lengthwise in 1/2 inch thick slices
In a small bowl, whisk together lime juice, olive oil, honey, cilantro, shallot, salt and pepper until blended. Preheat the grill to medium. Brush sweet potatoes with dressing. Grill, covered, about 6 minutes, each side, until tender and charred. Drizzle with remaining dressing for serving. Season with additional salt and pepper if needed.
