Caribbean Kale and Black Beans

This unique dish is a great way to get your veggies in for the day! Shop your local farmers’ market to pick up some fresh kale.

Serves 4

1/8 tsp salt
Heaping 1/4 tsp ground pepper
1 bunch kale leaves, comma, stems removed chopped into bite sized pieces, about 4 cups
1 can black beans drained and rinsed
1 tbsp apple cider vinegar
1 can full fat coconut milk

In a large pot over medium high heat, add 1 tbsp olive oil. Add the kale and 1/8 teaspoon salt and pepper and sauté 2-3 minutes or until the greens start to wilt. Add the black beans, apple cider vinegar and coconut milk, Stir and summer for ten minutes or until the greens are tender. Season to taste with salt and pepper and keep warm until you are ready to serve.
