Grilled Caribbean Jerk Salmon Tacos

Take that fresh salmon you just caught and have an “Island Style” party. See below for some unique topping recipes and the Jerk Rub featured here. Enjoy!

Serves 4

INGREDIENTS
4 salmon filets (5-6 ounces each)
olive oil
dry jerk rub (recipe on our website)

Preheat grill to medium high. Rub each salmon filet with olive oil and generously cover with jerk rub seasoning. Place on oiled, preheated grill. Cook for about 5 minutes per side or until salmon is cooked through. Remove from grill and let rest for a few minutes before flaking it into bite sized pieces. Season with additional salt and pepper if necessary.

TOPPING IDEAS
fresh cilantro
avocado
shredded red cabbage
lime wedges
sliced radish
queso fresco
grilled corn tortillas or romaine boats for a low carb option
Pineapple Mango Salsa (recipe below)
Chili Lime Crema (recipe below)

PINEAPPLE MANGO SALSA
1/2 fresh pineapple, cored and small diced
1 fresh mango, peeled, pitted, small diced
1 fresh red bell pepper, small diced
1/2 bunch of cilantro chopped fine, including tender stems
1/2 small red onion, finely diced
1 jalapeno, seeded finely diced
1 large garlic clove, finely grated
juice and zest of 2 limes
1 tsp cumin
1 tsp chili powder
salt and pepper to taste

Combine ingredients.

CHILI LIME CREMA
1 cup sour cream
1 chipotle pepper in adobo sauce, minced
2 tsp adobe sauce from can
zest and juice of one lime
salt and pepper

Combine ingredients and mix well.
